Cambridge Road Down The Rabbit Hole Sauvignon Blanc

This wine represents the latest exploration into the influence of skin contact on Sauvignon Blanc from our west facing Hillside block. What we've discovered is that we find more textural density and aromas gravitating toward tropical fruit like papaya and peppercorn with modest maceration times. This wine relies on ripe skins, seeds and acids. The aging on yeast lees in smaller format wood assists with suppleness, as does the essential work of lactic bacteria to further soften the wines steely resolve. Enjoy from here to eternity!
