These Pinot Noir grapes were left on the vines until beginning of May. Gently pressed and chilled down three times and then the ice was removed to achieve extra concentration.
Resulting in an unusual and appealing wine with lightly jammy plum and cherry flavours. Plus a deliciously creamy texture and reasonably lengthy finish. Almost Port-like.
80 grams of residual sugar.
