Pinot gris has been evolving for a number of years with the aim to have less residual sugar and to expose the middle palate more. To us, the strength of Pinot Gris lies in the middle. It is the middle palate where texture, tannin and alcohol keep the wine focused and alive, not through acidity or bountiful aromatics. Hiding this with higher residual sugar would not do justice to the variety.
Serving suggestion: 10-12 C, serve with pork rillettes or a mild fish curry.
