Big Sky 'Celestia' Pinot Noir 2020

This 2020 Celestia Pinot Noir is made from perfectly ripe Pinot Noir and the absolute minimum of handling.

100% whole bunch fermentation, short vatted into seasoned puncheons and aged for 2 years. No filtering and no fining. The result is a very perfumed wine with aromas of rosehips, black tea, black fruit and undergrowth, with a dense and dark palate, fine tannins and a satiny texture.

Deep ruby in colour with a very perfumed nose of rosehips, black tea, dark berryfruit, forest floor followed on the palate by  Dense and dark, black cherries and black plums, dried herbs, fine tannins, satiny texture.
